Nectar honey is predominant in yellow color. Honey close to early spring has a bright yellow color to orange. With time, honey loses its initial color, usually darkens, and opens during crystallization.
Through its nutritional qualities it is considered a food of great value in the food of people of all ages, having extensive uses in dietetics and therapeutics.
